Recipe Ingredients for Sweet Potato Crunch

4 cups mashed sweet potatoes
2 cup Sweetener
1/4 tsp Salt, Table
8 large Egg, White
24 oz evaporated milk
1 tsp Vanilla Extract
1/2 cup Margarine
1 cup Sweetener
3/4 cup Wheat Flour, White, All-purpose, Enriched, Bleached
3/4 cup Oats, Regular And Quick And Instant, Unenriched, Dry
1/2 tsp Cinnamon, Ground
1/4 tsp Salt, Table

Recipe Directions for Sweet Potato Crunch

Cook, peel and mash 3 lbs sweet potatoes. Blend with 2 c Splenda, 1 tsp salt, 8 egg whites, 2 cans evaporated milk, 1 tsp vanilla. Pour into a greased 9x13 pan. For crumb topping, blend 1/2 c margarine, 1 c Splenda, 3/4 c flour, 3/4 c oats, 1/2 tsp cinnamon and 1/4 tsp salt. Crumble topping over sweet potato mixture. Bake at 325 50-60 minutes or until no longer soupy in the middle.
