Makes 12 servings



Kind of like Thanksgiving in muffin form. Add cinnamon, nutmeg, and cloves to your liking.

Recipe Ingredients for Sweet Potato Cranberry Muffins

2 cups cranberries
2 tablespoons canola oil
1/2 cup fat free milk
1/4 cup butter
1 cup cooked mashed sweet potatoes
1 egg
1/3 cup wheat germ
2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup sugar
1/2 cup flour
1 cup whole wheat flour

Recipe Directions for Sweet Potato Cranberry Muffins

  1. Combine all dry ingredients in 1 bowl, and all wet ingredients in another (except cranberries). Fold the 2 together until just moistened, then add cranberries.

  2. Distribute batter evenly amongst muffin cups, and sprinkle tops with cinnamon sugar if desired. Bake for 18-22 minutes, rotating pan 180 degrees halfway through cooking time.
