Recipe Ingredients for Sweet Potato-Coconut Soup with Spicy Relish

30 g bacon (4 slices)
1/2 sweet potatoes , small dice
2 1/2 sweet potatoes , large dice
1 c red onion, chopped
2 tbs ginger root (2-inch piece), grated
3 c low-sodium chicken broth
1/2 c water
15 oz coconut milk
1 tbs honey
1/8 tsp cinnamon
1/4 c cilantro, chopped

Recipe Directions for Sweet Potato-Coconut Soup with Spicy Relish

  1. For relish: Cook bacon slices, set meat aside and pour off most fat. Add a pinch of red-pepper flakes, heat for 10 seconds. Add 1/2 small sweet potato, diced small, and salt & pepper to taste. Cook covered, stirring occasionally, until softened, 15 minutes. Uncover, increase heat to high, and cook until potatoes are golden brown, 5-7 minutes. Transfer to a bowl, stir in cilantro.

  2. For soup: Heat 1 tbs chicken broth until bubbling; add onion and ginger. Cook until soft, about 5 minutes. Add a pinch of red-pepper flakes, heat for 30 seconds. Add stock and water; bring to a boil. Add remaining potato, bring to a simmer. Cook until potatoes are soft, 20-30 minutes. Cool for 10 minutes.

  3. Transfer mixture to blender; process until smooth. Return to saucepan; simmer over low heat. Whisk in coconut milk, honey & cinnamon. Cook until thickened and warmed through. Season with salt & pepper. Ladle into bowls, top with a spoonful of relish and (optional) additional cilantro.
