alternative to chicken, a little too salty, would use tomato sauce instead of enchilada sauce

Recipe Ingredients for Sweet Potato and Chorizo Enchiladas

2 tbsp canola oil
1 large sweet potato
1 medium poblano pepper
2 cloves garlic
2 links chorizo
10 tortillas
1 10oz can enchilada sauce
1 cup shredded low fat cheddar cheese

Recipe Directions for Sweet Potato and Chorizo Enchiladas

  1. peel and cube sweet potato, dice poblano pepper into half inch pieces and mince garlic

  2. in large skillet cook the above three ingredients in the canola oil for about 10 min or until softened then squeeze out chorizo of it's casing and cook until thoroughly browned approx 5 to 10 min

  3. spray large casserole dish and preheat oven to 375 degrees. scoop filling into tortillas and fold end and place seam down in dish tightly against each other.

  4. pour enchilada sauce over rolled tortillas and top with shredded cheese. bake in oven until edges bubble about 20 min and serve hot.

  5. Optional garnishes: green onion, cilantro, sour cream
