Sweet Potato Black Bean Chili with Goat Cheese

Recipe Ingredients for Sweet Potato Chili

2 1tsp Olive Oil
1 medium raw Onion Red
1 tsp Sea Salt
5 serving Garlic Cloves
3 sweetpotato, 5" long Sweetpotato
3 cup Light
1 tbsp Syrups, Maple
3 tsp Country Dijon Mustard
14 oz Black Beans, Organic
14 oz Pinto Beans, Organic
4 oz Goat, Soft Type Cheese

Recipe Directions for Sweet Potato Chili

  1. Heat oil in a large (6-quart) pan or stockpot. Add the onion and cook until softened and just beginning to brown; stir in the salt and garlic and cook about 1 minute or until the garlic smells good.

  2. Sprinkle in spices and ground black and chipotle pepper, stirring to dissolve in the oil. Add sweet potatoes and pour over enough stock or water just to cover them. Cover the pot and cook over medium heat until tender (not mushy), about 20 minutes.

  3. Add mustard, maple syrup and beans (including their liquid) to the pot. Bring to a simmer and cook uncovered another 10 minutes or so to blend the flavors.

  4. Serve in bowls topped with goat cheese and warm tortillas alongside.
