Recipe Ingredients for Sweet Potato Chili

2 tsp vegetable oil
1 c onion, chopped
1 c green pepper, chopped
15 oz tomato sauce
15 oz pineapple chunks, drained
1 c water
1 1/2 lbs sweet potatoes, peeled & cut in 1 inch chunks
2 granny smith apples
2 lbs. kidney beans, canned
1 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 tsp cinnamon

Recipe Directions for Sweet Potato Chili

  1. Heat oil in a large saucepan over medium heat. Add onion & pepper. Cook, stirring frequently, until onion begins to brown, about 5 min.

  2. Add remaining ingredients and bring to a boil. Cover, reduce heat to medium low & simmer, stirring occasionally, 45 minutes or until sweet potatoes are tender.
