Recipe courtesy of Chocolate Covered Katie, less the orange zest and addition of more zucchini and kidney beans. I enjoyed eating this with chips and salsa!

Recipe Ingredients for Sweet Potato Chili

1 medium White Onion
15 oz Yam
2.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
1.75 cup Organic Black Beans
1.75 cup Beans Dark Red Kidney
1.75 cup (cooked) Cannellini White Kidney Beans
3.5 cup Tomatoes Diced
4 tsp Chili Powder
1 tsp Cumin
1 tsp Salt, Table
1 cup Natural Goodness Chicken Broth

Recipe Directions for Sweet Potato Chili

  1. Makes 5 2Cup servings:

  2. 1.5C cubed onion

  3. 3C cubed sweet potato/yam

  4. 2.5C diced zucchini

  5. 1 can black beans, drained

  6. 1 can red kidney beans, drained

  7. 1 can white kidney beans, drained

  8. 28oz canned diced tomatoes

  9. 4Tsp chili powder

  10. 1Tsp cumin

  11. 1Tsp salt

  12. 1C chicken broth(use H2O or vegetable broth to make this recipe vegan!)

  13. Combine all ingredients in large pot, bring to a boil, then reduce heat and simmer until potatoes are soft.
