If you like a thinner chili add a couple extra cups of water or veggie stock. For extra thick chili, refrigerate over night.

Recipe Ingredients for Sweet Potato Chickpea Chili

1 medium (2-1/2" dia) Onions
4 clove Garlic
2 medium Carrots
3 cup (8 fl oz) Water
15 oz Tomatoes Diced
1 sweetpotato, 5" long Sweetpotato
15 oz Peas Chick
15 oz Beans, Kidney, Red, Mature Seeds, Canned
2 tsp Cumin
3 tsp Chili Powder
1 dash Salt, Table

Recipe Directions for Sweet Potato Chickpea Chili

  1. Add the onions, garlic, and a drizzle of olive oil to a large pot. Cook over medium-high heat for about 5 minutes, stirring often, until the onions are browned and sizzling.

  2. Add carrots, water, beans, chickpeas, tomatoes, sweet potato, and spices. Bring to a boil then reduce heat and cook for 20-25 minutes, until sweet potatoes and carrots are tender.

  3. Garnish with lime juice, cilantro, or a dash of salt!
