Recipe Ingredients for Sweet Potato and Chicken Hash

715 grams Yam
515 grams Chicken, Breast, Meat Only
2 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 cup fresh Parsley
4 tbsp Chipotle Peppers
1 serving Natural Honey
2 large Egg, Yolk

Recipe Directions for Sweet Potato and Chicken Hash

  1. Place sweet potatoes (with skin) in large pot with cold water. Bring water to a boil, then reduce heat to a simmer. Cook until tender (about 30-35 minutes). Remove from pot and allow to cool down. In the same pot, bring water to a boil then reduce to a simmer. Place chicken breasts (seasoned with salt and pepper) into the poaching liquid until cooked through (about 12-15 minutes). Remove chicken from pot and allow to cool. Cut sweet potato into 1/2-inch cubes and shred chicken breast with a fork. Combine minced adobe peppers, scallions, parsley, and honey. Combine mix with the sweet potatoes and chicken. Refrigerate until cool. Once cool, add 2 egg yolks (1 might be fine) as a binder. Portion using a 1-cup measuring cup (about 180g). Form patties.

  3. Add 1 tsp of olive oil per patty in a pan. Cook patties until they have a nice crust (about 3-4 minutes on each side).
