Recipe Ingredients for Sweet Potato Chicken Curry

1 1/2 lbs chicken
2 cups sweet potato
1/2 cup frozen peas
1 1/2 cups onions
14 1/2 oz chicken broth
14 oz tomatoes
14 oz chickpeas
2 garlic cloves
2 tbsp ginger
1 tbsp olive oil
1/2 tsp salt
1 tsp pepper
2 tsp curry powder
1 tsp red pepper

Recipe Directions for Sweet Potato Chicken Curry

  1. brown chicken in oil

  2. take chicken out, add onions until tender, return chicken

  3. add all spices along with garlic and ginger and bay leaf

  4. saute for 5 minutes then add the chicken broth and tomatoes

  5. cook for 1 hour then add the sweet potatoes and chickpeas and saute for 30 minutes

  6. remove the bay leaf, add the peas and 1 tbsp lemon juice
