Quick Dinner to make for hungry family. Reminds me of Indian cuisine - wonderful colors with sweet pototo and red of tomato.Serve over basmati rice or other grain. I used Farro and it was wonderful!!

Recipe Ingredients for Sweet Potato & Cauliflower Curry

4 cups raw cauliflower
1 cup sweet potato
15 oz. tomatoes
1 small onion
1 clove garlic
2 teaspoons curry powder
1 tablespoon Olive oil
1/2 cup water
1/2 tsp salt

Recipe Directions for Sweet Potato & Cauliflower Curry

  1. Peel and dice sweet potato and cook in separate pot OR - timesaver - microwave in a teeny smidge of water and drain - hold on side.

  2. Heat tablespoon of oil in large, heavy pot.

  3. Brown onions and garlic for about 5 minutes, add curry spices and salt and stir with wooden spoon.

  4. Add water and chopped cauliflower and cook for about 10 minutes with lid on pot. Stir occasionally.

  5. Right before serving, stir in sweet potato and canned chopped tomatoes and heat to mix.

  6. Serve over Basmati Rice or other grain.
