Recipe Ingredients for Sweet Potato Casserole

2 pounds sweet potatoes
3 medium carrots
1/4 cup brown sugar
2 tablespoons unsalted butter
2 teaspoons ginger
1/2 teaspoon cinnamon
1/2 teaspoon orange zest
2 egg whites
1/3 cup chopped pecans

Recipe Directions for Sweet Potato Casserole

  1. Preheat oven to 350. Spray 1 quart casserole.

  2. Cut peeled sweet potatoes into chunks place in large pot. Cover with water. When starts to boil, add carrots, cut in chunks. Cook until both are tender (about 15 minutes). Drain well.

  3. Mash carrots and potatoes, add the brown sugar, butter, ginger, zest and cinnamon. Should be slightly chunky. Stir in lightly beaten egg whites. Pour into baking dish. Sprinkle with nuts. Bake until slightly puffed and heated throughout, about 30 minutes.
