Southern Living (They use butter not margarine and milk not skim milk.)

Recipe Ingredients for Sweet Potato Casserole

6 lb sweet potatoes
1 cup skim milk
1/4 cup margarine
3 tbsp sugar
1 tsp vanilla extract
1 tbsp orange juice
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
10 1/2 oz miniature marshmallows

Recipe Directions for Sweet Potato Casserole

  1. Boil potatoes until tender. Peel and place in a mixing bowl.

  2. Heat milk & next 3 ingredients in a saucepan over medium heat, stirring until butter melts and sugar dissolves. (DO NOT BOIL) Stir in orange juice, spices & salt.

  3. Beat potatoes at medium speed with an electric mixer until mashed. Add milk mixture, beating until smooth. Spoon half the mashed sweet potatoes into a lightly greased 13x9 baking dish; top evenly with half the marshmallows. Spread remainigt potatoes over the marshmallows.

  4. Bake uncovered at 350 for 25 minutes. Top with remaining marshmallows and bake 8-10 more minutes or until marshmallows are golden.
