Skip the butter for a lighter recipe. This dish is a perfect compliment to any thanksgiving dinner. Pineapples and marshmallows were meant to be eaten together

Recipe Ingredients for Sweet Potato Casserole

8 sweet potatos
2 stick unsalted butter
1 cup brown sugar
2 teaspoon ground cinnamon
24 oz crushed pineapple
28 gr mini Marshmallows
24 big Marshmallows

Recipe Directions for Sweet Potato Casserole

  1. Preheat oven to 375 degrees.

  2. peel and cut the sweet potatos in big chunks. Boil for 30 to 40 minutes until tender.

  3. Remove potatos from the water and let them drain for 10 minutes on a colander.

  4. Mash potatos well until smooth and no chunks are felt

  5. Add sugar, butter, cinnamon and pineapple. Mix thoroughly, ensuring that there are no clumps of brown sugar in the sweet potato mixture.

  6. Add mini marshmallows to the mixture and ensure they are well mixed.

  7. Pour the sweet potato mixture on a greased baking pan.

  8. Press the big marshmallows on top of the mixture

  9. Bake for 20 to 30 minutes until marshmallows are lightly gold on top.

  10. Serve with your favorite holiday main dish. It can also be eaten cold and it actually tastes better the next day.
