A tasty autumn dish, and not your usual sweet potato recipe.

Recipe Ingredients for Sweet Potato & Carrot Soup

2 tablespoons Earth Balance Original Natural Buttery Spread
1 onion, diced
1/2 teaspoon ground cardamom
1/4 teaspoon ground turmeric
1/4 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1/4 teaspoon ground cinnamon
1 pinch cayenne pepper
14 ounce vegetable broth
2 cups water
4 cups sweet potatoes, peeled and diced (about 2)
3 carrots, peeled and chopped
1 Salt and pepper to taste

Recipe Directions for Sweet Potato & Carrot Soup

  1. Melt Earth Balance in large saucepan over medium heat. Stir in onions and cook until golden brown, 5-7 minutes.

  2. Add seasonings and cook until fragrant, about 1 minute.

  3. Pour in vegetable broth and water; add sweet potatoes and carrots. Bring to boil over high heat, then reduce heat to medium-low, cover, and simmer until vegetables are tender, about 25-30 minutes.

  4. Remove from heat; puree in batches until smooth.
