Delicious, nutritious and easy Sweet Potato soup

Recipe Ingredients for Sweet potato, carrot, apple, red lentil soup

2 tbsp olive oil
4 cups sweet potato
3 large carrots
1 apple
1 onion
1/2 cup red lentils
2 tsp minced fresh ginger
1/2 tsp ground black pepper
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp paprika
1 dash cloves
4 cups vegetable broth
1 cup plain yogurt

Recipe Directions for Sweet potato, carrot, apple, red lentil soup

  1. peel and chop sweet potatoes, carrots, apple and onion

  2. heat oil in pot and add above, cook on medium-high heat until onions are transparent, about 10 minutes

  3. stir in lentils, ginger, pepper, spices and broth

  4. reduce heat to medium-low, cover and simmer until vegetables are soft, about 30 minutes

  5. working in batches, blend soup and return to pot

  6. garnish with about 1/4 cup plain yogurt
