Little cakes made of sweet potato

Recipe Ingredients for Sweet Potato Cakes

500 grams sweet potato
400 grams chickpeas
1 onion
1/4 cup chopped coriander
1/4 cup finely grated parmesan
2 tablespoons plain flour

Recipe Directions for Sweet Potato Cakes

  1. Boil sweet potato for ten minutes then drain and mash. Chill for 30 minutes.

  2. Preheat oven to 180 or 160 fanforced and line a baking tray with baking paper. Add drained and mashed chickpeas, chopped onion, chopped coriander, 2 tablespoons of cheese to sweet potato and mix well.

  3. Divide into 12 portions and arrange on a baking tray. Spray with olive oil and sprinkle with remaining cheese. Bake for 30 minutes or till warm through.
