Recipe Ingredients for Sweet Potato & Butternut Squash Soup

1 tbsp canola oil
1 yellow onion, chopped
1 tbsp ginger, fresh, minced
1 lb butternut squash, peeled & diced
1 lb sweet potatoes, peeled & diced
1 medium Russet potato, peeled & diced
6 cups chicken stock
1 pinch of salt

Recipe Directions for Sweet Potato & Butternut Squash Soup

  1. Heat oil in stock pot. Add onions and cook until tender. ~5 minutes

  2. Add ginger and stir until fragrant. ~1 minute

  3. Add squash, potatoes, and stock; bring to a boil then reduce to simmer immediately. Simmer for 45 minutes.

  4. Add salt to taste.

  5. Puree soup (via blender - traditional or immersion - or food mill. Return to pot and whisk to even out texture.

  6. Heat through, adjust salt and pepper to taste.
