Sweet Potato & butternut squash soup

Recipe Ingredients for Sweet Potato & butternut squash soup

330 g sweet potato, diced
250 g butternut squash, diced
2 garlic cloves, diced
1 tablespoon cumin
1 onion, diced
1 stock cube
1 litre hot water

Recipe Directions for Sweet Potato & butternut squash soup

  1. Heat 10 sprays of 1cal oil in large saucepan, add onion, and garlic, cook until soft add ground cumin and cook a further minute.

  2. Add sweet potato and butternut squash, stir and cook for 2 minutes.

  3. Add stock, bring to the boil and reduce to a

  4. simmer for 20 minutes or until the sweet potato is cooked.

  5. Blend or process vegetable mixture until smooth, dilute with water if necessary.

  6. Serve soup hot or cold.
