Recipe Ingredients for Sweet potato breakfast casserole

1/2 lb sweet potatoes
1/2 cup egg whites
1/2 cup skim milk
2 eggs

Recipe Directions for Sweet potato breakfast casserole

  1. Slice sweet potatoes into 1/8 inch slice and line in a glass casserole. Sprinkle with salt & pepper and any other seasoning you like (I like red pepper flakes with the sweetness of the potatoes).

  2. Whip together eggs, whites and milk, cover potatoes. Bake for about 45 min (or until knife inserted in center is clean) at 350 F.

  3. You can add some cheese if you'd like. 1/2 cup of part-skim mozzarella adds 160 calories to the dish.
