Recipe Ingredients for Sweet Potato Bread -- healthier version 1

1 cup applesauce
2 egg whites
1/2 cup soy flour
1/2 cup whole wheat flour
1/4 cup dry skim milk
1 cup Quaker oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup water
1 cup sweet potatoes
1/2 cup pecans
1/2 tsp vanilla
3/4 cup flax seed meal

Recipe Directions for Sweet Potato Bread -- healthier version 1

  1. ?Preheat the oven to 350 degrees F (175 degrees C). Grease and a 9x5 inch loaf pan.

  2. ?In a medium bowl, mix together the applesauce, flax meal, sweet potatoes, milk, and egg whites until well blended. Combine the flours, baking soda and salt; stir into the banana mixture until moistened. Spoon into prepared loaf pan.

  3. ?Bake for 1 hour and 10 minutes in the preheated oven, or until a toothpick inserted into the crown of the loaf comes out clean.
