no added sugar or fat only what's in molasses, sweet potato, carrot juice, egg, etc...

Recipe Ingredients for sweet potato bran mini muffins

1/2 cup unprocessed bran
1/4 cup soy milk
2 fl oz carrot juice
1/4 c buckwheat flour
1/4 c whole wheat flour
1/4 c corn meal
1/4 tsp salt
1 1/4 tsp baking soda
2 T ground flax seeds
1 egg
2 T molasses
1 small sweet potato, baked
1 tsp cinnamon,
1 pinch cloves,
1/2 tsp ginger
1 tsp sucanat

Recipe Directions for sweet potato bran mini muffins

  1. bring carrot juice and unsweetened soy milk to near boil and pour over bran while you assemble the rest of the ingredients.

  2. mix remaining dry stuff

  3. then add molasses, sweet potato (mashed ahead or not), and egg to bran mixture.

  4. add wet to dry and combine until just mixed.

  5. spoon into oiled cast iron mini muffin tin (i use lodge cast iron which this recipe perfectly fills)

  6. bake for 20 minutes at 400 or until toothpick comes out clean
