Recipe Ingredients for Sweet Potato & Black Bean Chili

0.333 oz Extra Virgin Olive Oil
1 small Onions
1 cup, cubes Sweetpotato
2 clove Garlic
1 tbsp Chili Powder
2 tsp Cumin
1/4 tsp Ground Chipotle Chile
1.333 cup (8 fl oz) Water
2 cup Beans, Black, Mature Seeds
1 cup, chopped Tomatoes, Red, Ripe
0.333 oz Lime Juice
29.57 grams Cilantro

Recipe Directions for Sweet Potato & Black Bean Chili

  1. Ingredients

  2. 2 teaspoons ext ra-virgin olive oil

  3. 1 small onion, finely diced

  4. 1 small sweet potato, peeled and diced

  5. 2 cloves garlic, minced

  6. 1 tablespoon chili powder

  7. 2 teaspoons ground cumin

  8. 1/4 teaspoon ground chipotle chile, (see Note)

  9. 1/8 teaspoon salt , or to taste

  10. 1 1/3 cups water

  11. 1 15-ounce can black beans, rinsed

  12. 1 cup canned diced tomatoes

  13. 2 teaspoons lime juice

  14. 2 tablespoons chopped fresh cilantro

  15. Heat oil in a large saucepan over medium-high heat. Add onion and potato and cook, stirring often, unt il the onion is slightly softened, about 4 minutes. Add garlic, chili powder, cumin, chipot le and salt and cook, stirring constantly, unt il fragrant, about 30 seconds. Add water, bring to a simmer, cover, reduce heat to maintain a gentle simmer and cook unt il the potato is tender, 10 to 12 minutes. Add beans, tomatoes and lime juice;

  16. increase heat to high and return to a simmer, stirring often. Reduce heat to maintain a simmer and cook until slightly reduced, about 4 minutes. Remove from the heat and stir in cilantro.
