Recipe Ingredients for Sweet Potato and Black Bean Burritos

1 1/2 tbs olive oil
1 cup onion
2 cloves garlic
2 cups black beans
1 cup corn
1 1/2 tbs chili powder
1 tsp ground cumin
2 tsp dijon mustard
1 1/2 tbs soy sauce
2 cups sweet potatoes
6 low carb tortillas
4 oz shredded low fat cheddar cheese

Recipe Directions for Sweet Potato and Black Bean Burritos

  1. Preheat oven to 350 degrees

  2. Heat oil in medium skillet and saute onion until translucent. Add garlic and stir in until garlic is soft.

  3. Mash beans (chunky) and sweet potatoes. Mix with corn and add to onion garlic mixture. Add liquid if necessary to achieve texture.

  4. Remove from heat. Stir in spices.

  5. Divide among tortillas. Top with cheese. Fold up burrito style and place on baking sheet.

  6. Bake 12 minutes in preheated oven.
