Sweet Potato and Black Bean Burrito

Recipe Ingredients for Sweet Potato and Black Bean Burrito

5 cups sweet potatoes (cubed and peeled)
1/2 teaspoon of salt
2 teaspoons canola oil
3 1/2 cups onions
4 garlic cloves (large)
1 tablespoon of minced fresh green chile
4 teaspoons ground cumin
4 teaspoons ground coriander
15 ounce can black beans (3 cans - drained)
2/3 cups of fresh cilantro leaves
2 tablespoons of fresh lemon juice
1 teaspoon of salt
8 whole wheat tortillas (low fat)

Recipe Directions for Sweet Potato and Black Bean Burrito

  1. Preparation:

  2. Preheat oven to 350. Boil sweet potatoes with the salt and water until tender.

  3. Warm oil and sauté onions, garlic and chiles. Add cumin and coriander until tender.

  4. Combine the black beans drained and rinsed in blender with cilantro, lemon juice ,salt and sweet potatoes puree until smooth.

  5. Transfer sweet potato mixture to large mixing bowl and mix in cooked onions and spices

  6. Spoon 2/3 to ¾ cup of filling into the center of each tortilla, wrap it up and place it seam down in baking dish

  7. Cover and bake for 30 minutes
