Recipe Ingredients for Sweet Potaoe with Carmalized Onions

1 cup sweet potatoe, boiled
1/2 cup vidalia onion
1/4 cup apple cider
1/4 cup water
1 tbsp Smart Balance, divided
1/4 tsp garlic, granulated

Recipe Directions for Sweet Potaoe with Carmalized Onions

  1. Peel and cut sweet potatoe into chunks. Place potatoes in saucepan with enough water to cover the pieces by about 1 inch. Boil until done.

  2. In a skillet place onions, water, garlic and cider. Cook until onions start to soften. . Reduce heat slightly and continue cooking until liquids are reduced (nearly all gone) and onion is golden brown. Salt and pepper to taste.
