A lower-fat version of quiche, good cold or warm. Evaporated skim milk can be substituted for half the milk.

Recipe Ingredients for Sweet Onion and Gruyere Quiche

38 g (6 slices) bacon, turkey
1 cup sweet onion, chopped
2 tsp olive oil
2 large eggs
2 large egg whites
1 1/2 cups milk
2 tsp cornstarch
1/2 tsp ground black pepper
1/4 tsp salt
1/4 tsp ground nutmeg
3/4 cup gruyere cheese, grated
1 pie crust, graham cracker

Recipe Directions for Sweet Onion and Gruyere Quiche

  1. Heat oven to 425 degrees.

  2. In the microwave or on the stovetop, cook the turkey bacon until crisp, according to package directions. Crumble and set aside.

  3. In a large skillet, heat the olive oil over medium. Add the onion and cook, stirring occasionally, until soft and golden, about 10 minutes. Stie in crumbled bacon and set aside to cool.

  4. In a mixing bowl, whisk together the eggs and egg whites. Add milk, cornstarch, pepper, salt and nutmeg, then whisk to combine.

  5. Mix cheese into cooled onion-bacon mixture, then spoon the mixture into the pie shell in an even layer. Pour the egg mixture evenly on top.

  6. Bake the quiche for 30 to 40 minutes, or until golden brown on top and set in the center. Transfer to a rack to cool for at least 10 minutes before slicing.
