A moist, tender banana bread made without any sweetener other than fruits

Recipe Ingredients for Sweet and Natural Banana Bread

1/4 cup canola oil
1/4 cup butter
1/4 cup light soy milk
8 pitted dates
3 small bananas
1 large egg
1/2 cup unbleached flour
1/2 cup whole wheat flour
1/2 cup oat flour
1/4 cup nonfat dry milk
1 tsp baking soda
1/2 tsp salt
1/2 cup raisins

Recipe Directions for Sweet and Natural Banana Bread

  1. Preheat oven to 350 degrees.

  2. Combine in food processor or blender: oil, butter, milk, dates, bananas and egg. Process until smooth and dates are chopped fine. Set aside.

  3. Oil a loaf pan and set aside.

  4. In a large mixing bowl combine flours, dry milk, soda and salt.

  5. Beat in banana mixture.

  6. Fold in raisins.

  7. Pour into loaf pan. Bake for 60 minutes or until cake tester inserted comes out clean.

  8. Allow bread to rest for 10 minutes. Remove from pan and set on side; allow to cool to room temperature before slicing.

  9. Store in an airtight container or wrap in foil and freeze.
