Sweet N Sour Chicken Recipe

My version of sweet and sour chicken. i tried to make it a good balance between healthy and yummy.

Recipe Ingredients for Sweet n Sour Chicken

1/3 lb boneless skinless chicken breast
1/2 red pepper
1 can pinapple chunks in juice
1 cup broccoli
1 tbsp ketchup
3 tbsp rice wine vinegar
1 tbsp low sodium soy sauce
4 teaspoons cornstarch
1/2 tbsp sweet chili sauce
1 tsp ginger
1 tbsp honey
1 tbsp brown sugar
1/4 cup low sodium chicken stock
1/2 green pepper
1 tsp garlic
1/2 cup onion

Recipe Directions for Sweet n Sour Chicken

  1. 1) cut chicken. Roll in some cornstarch, salt and pepper then brown slightly on a pan with some cooking spray about 3 min, or until no longer pink on the outside. Remove from pan.

  2. 2) Add red and green pepper and onion to pan and saute until tender crisp. About 3 min.

  3. 3) Mix all other ingredients, except left over cornstarch, in a bowl and whisk together.

  4. 4) Add chicken and sauce into the pan with the vegetables and bring to simmer. Cook 3-5min

  5. 5) Slowly add cornstarch until you reach desired consistency.

  6. Serve over brown rice or some low mein noodles and enjoy!
