Use xylitol instead of sugar to reduce the calories per serving to 128 per muffin instead of 150.

Recipe Ingredients for Sweet Muffins

1 egg
1/2 cup 2% milk
1/4 cup canola oil
1 1/2 cup unbleached flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt

Recipe Directions for Sweet Muffins

  1. Heat oven to 400F.

  2. Grease bottom muffin tin.

  3. Beat egg

  4. Stir in milk and oil.

  5. Mix remaining ingredients just until flour is moistened. Batter should be lumpy.

  6. Fill muffin tin dividing batter evenly.

  7. Bake about 12 minutes or until golden brown.

  8. Immediately remove from pan.
