These are somthing like the jelly doughnuts of the muffin family.

Recipe Ingredients for Sweet Jammies

2 c flour
1/4 c sugar
1 T baking powder
1/2 t salt
1/4 c unsalted butter
1 c plain yogurt
1/4 c rice milk
1 egg
1/2 t vanilla extract
1/2 c blueberry jam

Recipe Directions for Sweet Jammies

  1. preheat oven to 425 F

  2. grease 12-muffin pan or place paper liners in

  3. combine dry ingredients

  4. melt butter on low and let cool for 2 minutes

  5. stir in yogurt and milk to mixture

  6. beat in egg and vanilla to mixture

  7. add butter to mixture

  8. spoon half of mixture into muffin tin

  9. place 1 teaspoon of jam on each muffin

  10. place remaining batter on muffins

  11. cook for 15-20 minutes until golden brown

  12. let cool for 5-10 minutes
