From the Clean Eating book, page 209. Altered to suit my taste and food "consistency" issues. (I hate slimy food.)

Recipe Ingredients for Sweet Inca Porridge

1 cup Quinoa
8 oz Oats, Rolled, Regular Old Fashioned
1/4 tsp Sea Salt
4 oz Dates - chopped
1 tsp Nutmeg, Ground
1 tsp Cinnamon, Ground
1 tsp Vanilla Extract
2 1/4 cup (8 fl oz) Water

Recipe Directions for Sweet Inca Porridge

  1. Rinse and shake quinoa vigorously to remove bitter coating.

  2. Place quinoa, 2 cups of water and salt in pot with tight fitting lid. Bring to a boil then reduce heat to low. Simmer for approx 30 minutes. Add remaining ingredients and mix together well. (For best results, mix the nutmeg and cinnamon prior to adding to the pot.) Use the final 1/4 cup water to aid in stirring the mixture. Add more water if you prefer a moister consistency.

  3. Turn off heat and let sit covered for five minutes. Optional - sprinkle with 1tsp of chia seeds for a nutty finish.

  4. Serve with berries.
