Taken from Williams-Sonoma's "Eat Well" cookbook. You can substitute white potatoes for sweet.

Recipe Ingredients for Sweet Frites with Garlic and Sea Salt

2 lbs sweet potatoes
2 tbsp olive oil
1/4 tsp sea salt (plus more to taste)
3 tbsp Parmesan cheese, grated
2 tbsp fresh parsley leaves, chopped
1 garlic clove, minced

Recipe Directions for Sweet Frites with Garlic and Sea Salt

  1. Preheat oven to 450F. Rinse and dry sweet potatoes. Cut sweet potatoes lengthwise, without peeling them, into slices -inch thick, then cut each slice into batons about -inch wide and 3 inches long. Arrange in a single layer on a large rimmed baking sheet and toss with olive oil and tsp salt. Roast, stirring with a spatula midway through baking time, until tender and brown on the edges, 20-25 minutes.

  2. In a large bowl, mix Parmesan, parsley and garlic. Add warm oven fries and mix gently to coat. Season to taste with additional salt, and serve at once.
