Arborio rice and my garden's sweet corn. It's sophisticated comfort food!

Recipe Ingredients for Sweet Corn Risoto

1/2 cup arborio rice
3 tbs shallots, chopped
1/4 c butter, melted
1/4 c dry white wine
2 cups corn, pureed
1 cup whole corn
3 cups chicken broth

Recipe Directions for Sweet Corn Risoto

  1. Melt butter in a good sized fry pan.

  2. Saute shallots about 4 minutes.

  3. Add rice and cook about 4 minutes.

  4. Add wine and cook over medium heat until all liquid is gone.

  5. Add chicken broth and cook until the rice is creamy.

  6. Add both corn portions.

  7. Heat until warmed through.
