Recipe Ingredients for Sweet Corn Muffins

1 1/2 cups flour
1 cup sugar
3/4 cup cornmeal, yellow
1 tablespoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup Crisco shortening
1 cup milk, 1% lowfat, divided

Recipe Directions for Sweet Corn Muffins

In a mixing bowl, combine the dry ingredients. Add eggs, shortening and 1/2 cup of the milk; beat for 1 minute. Add remaining milk; beat until blended. Fill paperlined muffin cups three-fourths full. Bake at 350 degrees for 25-30 minutes or until muffins test done.
