Apricot Chicken w/ Rice Noodles, Steamed Broccoli & Spinach.

Recipe Ingredients for Sweet Chicken and Rice Noodles

2 oz rice noodles
2 oz chicken breast
1 tsp apricot preserves
1 tsp parsley
1 tsp extra virgin olive oil
1/2 tsp garlic powder
1/2 cup cooked broccoli
1/2 cup cooked spinach
1/2 tsp kosher salt
1/2 tsp pepper

Recipe Directions for Sweet Chicken and Rice Noodles

Set oven to 375 degrees. Cut Chicken breasts into cubes, sprinkle extra virgin olive oil into baking pot or upon pan, lay the cubes in pot/on pan. Lightly lay a few tbs Apricot Preserves (Organic Preferred) evenly on top of chicken cubes. Sprinkle parsley, kosher salt, pepper, and garlic powder upon chicken cubes. Bake for 25-45 minutes, depending on size & whether pan or pot baking. While cooking, clean and cut Broccoli and grab fresh spinach (about 1/2 cup per person for each). You can roast these on a tray in the oven, boil on the stove in water or steam via pot & cover tray. When Chicken has 15 minutes left, boil pot of water for rice noodles, drain when finished. Lay rice noodles on plate (2 oz) then chicken on top, lay the veggies on the side. Serve and enjoy!
