You can use red, yellow, or orange sweet Bell peppers

Recipe Ingredients for Sweet Bell Pepper and Fresh Herb Frittata

2 medium potatoes
1/2 tbsp olive oil
1/2 medium onion
1/2 cup green pepper
6 medium eggs
2 cups plain soy milk
1 tbsp basil
1 tbsp parsley
3/4 tsp salt
1/8 tsp black pepper
1/4 tsp paprika

Recipe Directions for Sweet Bell Pepper and Fresh Herb Frittata

  1. Preheat oven to 350 degrees F

  2. Slice potatoes into 1/2-inch rounds. Form a single layer of potatoes on bottom of slightly oiled 8x8-inch baking dish, and put aside.

  3. Saute onions over medium heat fro 5 minutes or until onions are soft.

  4. Add peppers and saute for 1 minute.

  5. Spread onion mixture evenly over potato layer.

  6. In small bowl, beat eggs, soy milk, herbs, salt and pepper. Pour into baking dish and lightly sprinkle paprika over top.

  7. Bke for 30 minutes or until eggs have set in the middle.
