Recipe Ingredients for Swedish Rye Bread

1 cup Buttermilk
2 tbsp Butter
2 1tsp Vegetable Oil, Coconut
1 cup (8 fl oz) Water
1/4 cup, packed Sugars, Brown
3 3/4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
2 1/2 cup Rye Flour
1 oz Yeast
1/2 tsp Baking Soda
1 1/2 tsp Sea Salt
1 scoop Stevia Powder
2 oz. Vital Wheat Gluten

Recipe Directions for Swedish Rye Bread

  1. Mix Rye flour, buttermilk and melted butter. Soak in a warm place for 12 to 24 hours.

  2. The following day heat water to about 110 degrees. Melt Coconut oil, then add brown sugar, Stevia, salt, and baking soda.

  3. Combine with soaked flour and mix until it forms a dough.

  4. Dissolve yeast in 1/4 cup very warm water. Add to dough. Then add 1/4 cup Vital Wheat Gluten.

  5. Beat with dough hooks for about five to ten minutes. Add white flour 1/2 cup at a time until dough is firm enough to kneed.

  6. Cover; let rise until double in bulk.

  7. Knead; shape into two loaves; let rise again.

  8. Bake at 350 degrees for about 45 minutes.
