Swedish Rice Pudding Recipe

Christmas dish to serve Christmas Eve and Christmas morn. Recipe calls for cinnamon stick instead of ground, but I used groudn for my version. Can be heated in the oven next day, 130 C, in a buttered dish, with a little milk added, as well as dots of butter and a sprinkling of sugar. Will make a skin if uncovered.

Recipe Ingredients for Swedish rice pudding

3.38 cups (8 dl) arborio rice
1 3/5 liters water
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2 1/2 liters whole milk
1/2 liter cream
1/2 cup raw sugar
1/4 cup butter

Recipe Directions for Swedish rice pudding

  1. Mix rice, water, salt and spices in a heavy-bottomed pot. Bring to the boil and simmer with lid on for 10 minutes. Lower heat, stir in milk and cream, and let the rice swell on very low for 30-40 minutes with pot covered.

  2. Serve with milk and top with 1 tsp sugar, butter.

  3. Can also be served with wild blueberry jam or lingon jam.
