Also known as "Roll-Ups". Similar to a crepe. They're thin, un-levened pancakes to be topped with a small amount of margarine (or butter) and sugar, or a fruit spread.

Recipe Ingredients for Swedish Pancakes

1 Egg
1/3 cup skim milk
1/4 cup whole wheat flour
1 pinch of salt

Recipe Directions for Swedish Pancakes

  1. Combine all ingredients in a bowl. Spoon about 2 tbsp. into a hot skillet (sprayed with a non-stick spray or use a non-stick pan) and roll the batter around so it makes a large pancake. They should be very thin.

  2. Cook until light brown on one side (it may bubble a bit) then flip and cook on the other side.
