Swedish Pancakes Recipe

Thin but yummy pancakes. My kids don't like the fluffy type of pancake, but they think these are perfect. Very similar to a crepe.

Recipe Ingredients for Swedish pancakes

3 eggs
1 1/2 cups flour
3 cups skim milk
2 tbsp olive oil
1 tsp vanilla
1 tsp cinnamon

Recipe Directions for Swedish pancakes

  1. Pre-heat a non-stick griddle to medium/high.

  2. Combine all ingredients with wisk.

  3. Measure 1/3 cup of mixture onto griddle for each pancake.

  4. Flip once when lightly golden brown.

  5. Keep warm in a low oven.

  6. Serve with real maple syrup or sprinkling of powdered sugar.
