Thin crepe-like pancakes filled with bluberry preserves or better yet, pie filling. Makes 10 cakes, 2 per serving. [Recipe lightened up from Frugal Gourmet on Our Immigrant Ancestors]

Recipe Ingredients for Swedish Pancakes with Blueberries

2 eggs
3 cups skim milk
1 1/2 cups flour
1 tbsp sugar
1 tsp salt
1 tbsp butter
8 tbsp blueberry preserves

Recipe Directions for Swedish Pancakes with Blueberries

  1. Beat eggs and milk.

  2. Gradually add flour, sugar and salt.

  3. Heat a nonstick pan.

  4. Grease lightly with butter. Reapply between cakes.

  5. Pour about 1/2 cup of batter into pan.

  6. Tilt pan to spread batter.

  7. Flip over when lightly browned.

  8. Spread preserves (or pie filling) on pancake and roll.

  9. (Powdered sugar dusting is optional.)
