Uses yogurt and gluten-free breadcrumbs.

Recipe Ingredients for Swedish meatballs

1 lb. lean ground beef
1/2 cup bread crumbs
2 tbsp dried minced onion
1 large egg
1 1/2 tbsp dill weed
1 tsp minced garlic
1/4 tsp nutmeg
1 cup beef stock
1 cup plain yogurt

Recipe Directions for Swedish meatballs

  1. Preheat oven to 350.

  2. Combine all ingedients except stock and yogurt and 1/2 the dill weed. Shape into 24 1-inch balls. Place on prepared baking sheet.

  3. Bake 20 minutes, or until browned. Remove from oven.

  4. In a large skillet whisk together the beef broth, yogurt and dill. Add 1 tbsp of cornstarch (mixed first with 2 tbsp cold water) to mixture if it needs to be thickened.

  5. Place meatballs in skillet and heat to serving temperature.
