Swedish Brown Beans. Prepare this a day ahead, because the beans need to soak overnight. You can also add a cinnamon stick for extra flavor while the Bruna Bönor is cooking. Remove the cinnamon stick before serving.

Recipe Ingredients for Swedish Bruna Bönor

1 lb dry beans, Swedish brown variety
7 c water
3/4 c packed brown sugar
3/4 c dark corn syrup
1/3 c vinegar
2 t salt
1/2 t nutmeg
2 t cornstarch
1 T cold water

Recipe Directions for Swedish Bruna Bönor

  1. Place the beans in a strainer. Wash them thoroughly and drain the water.

  2. Put the beans in a large pot and add 7 c of water.

  3. Let the beans stand covered overnight.

  4. Bring the beans to a simmer the next day.

  5. Make sure the cover is on the pot tightly, and let the beans simmer until they are tender. This should take about 3 to 3-1/2 hours.

  6. Mix in the sugar, vinegar, syrup, salt and nutmeg. Then mix together your cornstarch with 1 T of cold water. Mix this in with the beans.

  7. Simmer the beans for another 15 minutes, uncovered. The beans are done once they have thickened. You may need to add a bit more cornstarch if the beans aren't thick enough.

  8. Serve the Swedish Bruna Bönor hot.
