Combine all ingredients in a 4 qt. pot and simmer, adding pepper, and any other herbs or spices to taste - rosemary, basil, and/or oregano all compliment the flavors nicely. A great soup that is easy to put together and is delicious by itself or with boneless, skinless chicken breast.

Recipe Ingredients for Swamp Soup

32 oz. Fat Free Reduced Sodium Chicken Broth
1/2 lb. frozen Spinach
16 oz. canned Kidney Beans
3 medium Tomatoes, Chopped
1 cup Chopped Broccoli
1 cup Frozen Mixed Vegetables
1/2 lb. Fresh Green Beans
1/3 cup Extra Virgin Olive Oil

Recipe Directions for Swamp Soup

  1. Combine all ingredients in a 4 qt. pot

  2. Add pepper, herbs and spices to taste

  3. Simmer untill all frozen ingredients are thoroughly cooked, the green beans should still be slightly crisp but tender.
