All vegetables are cooked in salt pork juice until reduced. Makes a good vegetable stew to serve with cornbread muffins or mexican cornbread.

Recipe Ingredients for Swamp Cabbage Stew

12 cups cabbage
2 medium red onions
3 medium tomatoes, diced
8 ounce salt pork, cured
1 tsp cayenne pepper, ground

Recipe Directions for Swamp Cabbage Stew

  1. Saute diced salt pork until done.

  2. Add onions and saute until reduced.

  3. Add cabbage and tomatoes and put lid on pot. Simmer for one hour, stirring once.

  4. Add cayenne pepper after one hour.

  5. Cook for one more hour until done.
