I make this for breakfast at least three times a week

Recipe Ingredients for SW Egg Scramble

3/4 cup green bell peppers
3 tbsp. egg whites
1 oz. greek yogurt
1 tbsp. salsa
1/2 whole wheat tortilla
2 tsp. ground cumin
2 tsp. garlic powder
1/4 jalapeno pepper, chopped

Recipe Directions for SW Egg Scramble

  1. Heat small pan over medium heat.

  2. Cut and seed the jalapeņo, add to pan along with bell peppers, (I usually use frozen ones.)

  3. Cook until jalapeņo and bell peppers are tender, add cumin and garlic powder.

  4. Add egg whites and cook until set.

  5. Serve on top of tortilla with salsa and plain greek yogurt.
