Recipe Ingredients for SVA Blueberry Waffles

2 eggs
2 cups buttermilk
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup smart balance butter
1 cup blueberries

Recipe Directions for SVA Blueberry Waffles

  1. Heat waffle iron, separate eggs. Place yokes in large bowl, whites in a small bowl. Add buttermilk to egg yolks and beat well. Add flour, baking soda, baking powder, and salt. beat until smooth! Stir in Melted butter. Beat egg whites until soft peaks form. Fold egg whites into batter. Fold blueberries into batter. bake in hot waffle iron until steaming stops and waffle is golden brown.

  2. tip: To prepare wattles using milk. Decrease milk to 1 3/4 cups, increase baking powder to 4 tsp and omit baking soda.
