A delicious pumpkin soup from a wonderful French restaurant in Wheaton, IL.

Recipe Ingredients for Suzette's Pumpkin Soup

1/2 cup diced celery
1 cup diced onion
1/4 cup butter
1 tsp. thyme
1/2 tsp salt
1 cup milk
2 cups low sodium chicken stock
1 cup apple cider
30 oz pumpkin puree
1 tbs pumpkin pie spice

Recipe Directions for Suzette's Pumpkin Soup

  1. Sauté 1/2 cup of diced celery in 1/4 cup of butter until soft. Sweat 1 cup diced onions in butter. About five minutes. Season with fresh thyme, salt and pepper.

  2. Warm 1 cup of milk.

  3. Make a roux with 2 tablespoons of butter and 2 tablespoons of flour.

  4. Add Milk and whisk until smooth. Add 2 cups of Chicken Stock and 1 cup of Apple Cider.

  5. Turn up heat to a boil or simmer for 15 minutes.

  6. Add 2 cans of pumpkin puree or roasted butternut squash.

  7. Warm over low heat.

  8. Season with 1 T of Pumpkin Pie Spice (more or less according to your taste). Check the seasonings and add pepper and salt, if needed.

  9. Puree with submersion blender or in a blender or food processor until smooth.
