Basic rich moist bread adapted from the Moosewood Recipe book. Makes 3 loaves

Recipe Ingredients for Suzanne's Whole Wheat Bread

2 tbsp dry yeast
1/2 cup warm water
3 cups milk, scalded
1/2 cup honey
1/2 cup melted butter
1 tbsp salt
5 cups whole wheat flour
4 cups unbleached white flour
2 cups cooked quinoa
4 oz oat bran
1/2 cup sunflower seeds

Recipe Directions for Suzanne's Whole Wheat Bread

  1. Generously butter three 5x9 inch loaf pans

  2. Proof yeast in the warm water with a bit of sugar.

  3. In a large bowl mix together the scalded milk, honey, melted butter or vegetable oil and salt.

  4. When this mixture is lukewarm, stir in the yeast.

  5. Add 4 1/2 cups flour mixed with quinoa and bran into the liquid and beat 300 strokes.

  6. Gradually add more flour stirring well between additions until the dough is stiff.

  7. Turn the dough onto a floured board and knead 10 minutes, adding as much flour as needed to prevent it from sticking. Place the dough in a large oiled bowl turning it so all sides are oiled.

  8. Cover the bowl with a cloth and let rise until doubled, about 1 1/2 hours.

  9. Punch down the dough and let it rise again for about 1 hour.

  10. Punch down the dough once more, divide it into 3 equal parts and shape it into 3 loaves, placing them in the pans.

  11. Allow the dough to rise a third time for 30 to 45 minutes

  12. Bake in a preheated oven at 375 Degrees for about 40 minutes.

  13. Turn out of the pans and cool on a rack.
